Peanut Butter and Chocolate Fudge

I’m feeling generous this month. I am trying to commit to posting more than one recipe per week.
Week 1: CHECK!

Peanut Butter and Chocolate Fudge Recipe - Cookin5m2-3

I am trying to share interesting recipes that are useful for this season, whether as sweets and desserts or dinner ideas of Christmas and New Year’s Eve. You can view all the posts coming up by following the link here: Christmas Recipes Dec. 2014

This week, my friend Kevin sent me a link with delicious fudge recipes and I could see him drooling. I decided to get inspired and attempt to make some because, honestly, I always wanted to make some fudge. These recipes are really easy. You don’t need any fancy ingredients. The only problem is that they’re loaded with fat and sugar. But they’re delicious! And it’s December and the Festive season. Loose sweaters all the way!

In this recipe, I relied on a couple of fudge recipes and decided to combine an element from one, and some from another to create this mix. I used my own (crunchy) peanut butter and used crushed biscuits, but I did not press them into the peanut butter mix. They acted as a separator keeping the chocolate away from the peanut butter. In the procedure I suggest it is pressed in to avoid such an accident.

Peanut Butter and Chocolate Fudge

Ingredients

  • 1 cup peanut butter
  • 50g butter
  • 1 tsp vanilla (optional)
  • 1 cup powdered sugar
  • 250g dark chocolate
  • 1/2 can sweetened condensed milk
  • Salt (optional)
  • Crumbled biscuits (optional)

Procedure

  • In a pot, heat the peanut butter, butter and vanilla and mix until well incorporated
  • Sift the sugar and add in batches to the peanut butter and mix well after each batch until you’ve added the whole cup (feel free to reduce according to the stiffness of the mixture)
  • In a lined 20×20 cm tray, spread the peanut butter mix evenly
  • Spread the crumbled biscuits and press gently until they’re in the mixture
  • In a double boiler, melt the chocolate and the sweetened condensed milk
  • Whisk well and spread over the peanut butter mix
  • Sprinkle some salt or salt flakes on top
  • Cool and refrigerate before cutting into 3 cm squares
  • Store in an airtight container in the refrigerator

For today’s Christmas song, I chose Kylie Minogue’s rendition of Santa Baby (to step away from and avoid posting many songs from Glee)
