Once you think Easter is gone, it comes back again. This year, they are one week apart. But be prepared next year for a full month apart between the Western Easter and the Eastern one. The perks of that, one holiday for us to celebrate, another to rest.
Last week, while I was sick, the house was busy preparing Maamoul; delicately rolling the scented dough, stuffing it, and pinching it with the marks of special metal tongs, I had made these for a change. They’re fun and full of colors. I would rather indulge myself in mom’s incredibly delicious Maamoul, one after one, over an occasional bite of chocolate, exclusively in this season. Don’t get me wrong, I LOVE chocolate, but on easter -and 2 to 3 weeks after easter- in a Lebanese/Palestinian family, it is Maamoul that gets the spotlight.
We celebrated Easter last week at home, but this is a valid post to send Easter wished to all the readers from both sects. I wish you a blessed season and a happy holiday. And yes, I tasted Maamoul from other mothers and I can say, THEY DON’T STAND A CHANCE! If you feel confident enough, bring your maamoul forward
White and Dark Chocolate Easter Bark
Ingredients
- 300g Dark Chocolate
- 150g White Chocolate
- Toppings: mini marshmallows, mini m&m’s, sprinkles, sugar confetti…
Procedure
- Line a 50x20cm (or similarly medium size) baking sheet with parchment
- In a double boiler, melt the dark chocolate, once it had melted, evenly spread on the parchment
- Melt the white chocolate and dollop over the the dark chocolate and mix slightly
- Sprinkle the toppings all over and leave for a couple of hours to set
Lovely post. I am not into chocolate very much (though occasionally…), but I do adore maamouls! I wish I could compare your mom’s to those I’ve tried from my Lebanese friend’s moms here in France… 😉 Just to see if they are as good as you claim (I bet they are).

Beautiful and colorful chocolate bark, but I would love to try the Maamoul! I can see it is a pastry, but what is it filled with? Looks yummy!

Excuse me, I forgot to add a link to last year’s Maamoul post.
Maamoul is an Easter pastry (Muslims make these as well for their Al Fitr holiday as well) made with fine and coarse semolina dough and stuffed with either dates paste, ground pistachio or walnut mix.
They’re adequately flavored with rose and orange blossom water, and mom smokes the dough with special incense that gives the cookies another layer to unfold as one enjoys the cookie.
