Black Bean Broccoli Fried Rice

Ingredients

  • 3 tbsp vegetable oil
  • 3 cups cooked basmati rice (leftover rice works well here)
  • 1 cup cooked black beans
  • 1 diced yellow pepper
  • 1/2 small head of broccoli, separated into florets
  • 2 eggs
  • 2-3 green onion stalks, sliced thinly
  • 1/4 cup soy sauce
  • 3 tbsp mirin
  • Oyster sauce (optional)

Procedure

  • In a large wok, heat the vegetable oil and throw in the yellow pepper and the brocolli. Toss until slightly soft. Add the beans and heat through
  • Throw the rice into the wok, adding more oil if needed, and toss to fry and heat
  • Make a well in the center and crack the eggs and scramble quickly into small pieces before mixing them with the rice and vegetables. Add the soy sauce and mirin and taste and adjust to your liking. Top with the sliced green onions and serve
