This is a recipe I crave every now and then.

I’ve had it the first time at a restaurant in Hamra-Beirut a year ago and tried to replicate it with a great success.
It is one of those recipes you put together in no time, especially when you have friends over for brunch or dinner and you don’t have the luxury of TIME to prepare ahead. All you have to do is pour and mix, and let the oven do the magic!
The result is a warm delicious cup of silky tomato puree that is flavored with salt and pepper, garlic and onion (I used powdered ones for convenience) and oregano and basil and there’s no better thing to do than to dip toasted bread into the warm soft cheese in the center to scoop a heartwarming bite.

Goat Cheese Marinara Cups
Serves 4 persons
Ingredients
- 2 cups tomato puree (passata)
- 4 tsp garlic powder
- 2 tsp onion powder
- 4 tsp dried oregano
- 2 tsp dried basil
- Salt and pepper
- 200g soft goat cheese (or goat labneh)
- Bread for dipping, cut into circles or batons
Procedure
- Divide the ingredients into four small heat-proof cups or ramekins. In each cup put half cup tomato puree, 1 tsp galic powder, half tsp onion powder, 1 tsp oregano and half tsp basil. Stir
- Cut the cheese into 4 pieces and drop each one in the tomato puree
- Bake in a 180° oven for 10-15 min until it is hot and bubbly
- Cut the bread into baton sticks or into circles
- Brush or spray the bread with olive oil and toast in the oven until golden
- Serve the ramekins warm with a drizzle of olive oil and the bread on the side
