Sprouts, A Month of Excellent Vegan Food

Four weeks.

A quick setup for an existing space, but designing a new menu and testing it, then going on with it. Sprouts came to life in less than a week and it fully was operational.

Twenty three dinners and six brunches of solely vegan food. The menu is designed to fill you up on nutrients rather than bread (if you came hungry and could not resist nibbling on the delicious bread, I lift the responsibility off my back) with dishes that focus on pulses, grains, beans, and of course vegetables. Cooking vegan is a lot harder than vegetarian cooking or cooking with meats. You need to bring up the flavor with cooking techniques and spice blends, and the main ingredients themselves. It is challenging, and i think I played the challenge well.

“Sprouts” My VEG Restaurant and Vegan Quinoa Minestrone Soup

My belly is growing.

No, I am not pregnant. I am eating. Eating for one. Or two. Heck, even three! Me, my mind, and my belly. My irregular eating routine I’m going through lately is starting to bug me. But that is forgivable for all the things I’m working on in parallel. Between procrastination and the nothings I am committed to, I am actually getting some work done.

Which brings me to the real good news!!!

Vegetable Ramen Noodles Soup

Even before I thought of posting a round up of my failed recipes, I posted an attempt at Ramen that was a failure. Following my friend’s advice, Lynn from BreadOnButter, I approached the Ramen again last year with a fair success. Yet, it was nighttime and it didn’t look photogenic enough for a post. Lynn’s recipe used bok choy, so I bought one and used the leaves for the Ramen. I also trimmed off the bottom and left it to sprout, giving nice green leaves again. But the weather was warm, so the sprout gave a shoot which gave flowers that turned into seeds. Now I have bok choy seeds to plant! Let’s hope they work.
This year, I’m craving Asian flavors like crazy, and the texture of noodles. You might as well throw me in a pool of noodles with soy sauce and sesame oil fountains and call it Christmas!

Ever had too much work but you didn’t feel like doing any?
You sit, open your computer, and just stare at the screen. Maybe open a couple of links and waste time until the day is over and you come to the conclusion that you didn’t do anything all day.
