Asian Blood Orange Chicken

Asian Blood Orange Chicken recipe - cookin5m2-3

During the days of Sprouts, I used to give “lectures” to guests regarding food consciousness. Few were those who are aware of what goes into their food, most of those were the ones who cook.

We have not been very aware of our nutrition except for the past few decades. We have been, and somehow still are, subject to what we’re told to eat and not to. With the rise of ready-made and processed foods, we ate without knowing what is going into the food. It was only until recent times that some of us became aware of what goes into what we’re eating. Sprouts, A Month of Excellent Vegan Food

Four weeks.

A quick setup for an existing space, but designing a new menu and testing it, then going on with it. Sprouts came to life in less than a week and it fully was operational.

Twenty three dinners and six brunches of solely vegan food. The menu is designed to fill you up on nutrients rather than bread (if you came hungry and could not resist nibbling on the delicious bread, I lift the responsibility off my back) with dishes that focus on pulses, grains, beans, and of course vegetables. Cooking vegan is a lot harder than vegetarian cooking or cooking with meats. You need to bring up the flavor with cooking techniques and spice blends, and the main ingredients themselves. It is challenging, and i think I played the challenge well.

Vegetable Ramen Noodles Soup

Even before I thought of posting a round up of my failed recipes, I posted an attempt at Ramen that was a failure. Following my friend’s advice, Lynn from BreadOnButter, I approached the Ramen again last year with a fair success. Yet, it was nighttime and it didn’t look photogenic enough for a post. Lynn’s recipe used bok choy, so I bought one and used the leaves for the Ramen. I also trimmed off the bottom and left it to sprout, giving nice green leaves again. But the weather was warm, so the sprout gave a shoot which gave flowers that turned into seeds. Now I have bok choy seeds to plant! Let’s hope they work.
This year, I’m craving Asian flavors like crazy, and the texture of noodles. You might as well throw me in a pool of noodles with soy sauce and sesame oil fountains and call it Christmas!

Labneh Sandwich in Wood-fired Tannour Bread

On an early Summer weekend, my family and a couple of friends decided to have a sleepover and rafting in Al Assi River in the Bekaa. We hit it off for the 3 hour drive, co-piloting to my sister’s friend which made the time pass like a breeze.

We reached there at night, modest bungalows by the freezing river, under the pitch black sky, around the fire that the other groups have started to keep warm. We slept around midnight to get some rest before the busy day ahead. Continue reading

Vegan Quinoa Soup and The Unbearable Laziness of Being

Ever had too much work but you didn’t feel like doing any?
You sit, open your computer, and just stare at the screen. Maybe open a couple of links and waste time until the day is over and you come to the conclusion that you didn’t do anything all day.
